Erin: Eggplant fries!

I’ve made baked polenta fries, butternut squash fries, sweet potato fries, parsnip fries, and most recently, carrot fries.

Somehow, I never considered turning the creamy, yet industrious egglplant into a fry. How could I reduce this versatile vegetable to cutlet form?

Tonight, I decided the time had come!

Preheat oven to broil (high).

Cut eggplant into fry shaped sticks. Coat lightly with your choice of oil and seasoning.

Broil for 20-30 minutes, turning several times, until all the fries are crispy and blackened and don’t look soggy in spots.

Season again and serve with something to dip them in :)

These fries made a nice accompaniment to tonight’s salad! They were crunchy on the outside, fluffy and creamy on the inside. These would be extra good if they were breaded with balsalmic vinaigrette and some panko crumbs. Dankles!

  3. love this idea so genus and creative…i have a big ol’ eggplant in my fridge and i wasnt sure what to make with it,..NOW i know! fries! :) they look so good, healthy and easy! maybe a tzkiki sauce for dipping wold be good hmmm ? :)

    Last week I made eggplant fries and encrusted them with almond meal. The toasty almond crunch…A-mazing!!

  8. You would be so proud of how I spent my Sunday…lazing in bed with crosswords and a little bit of homework, only leaving the house once for groceries :) Twas delightful.

    I’ve never tried eggplant, but I have a feeling anything in roasty fry form would be scrumptuous!
