Pies, I hope your weekends have been nothing but gorgeous. The past two days have been a trip. I’ve been slammed! I’m not up for writing a long post, so I’ll keep this short and picture heavy.
Friday

For breakfast, I had overnight oats! Here’s my mixture: 1/3 cup oats, 1/2 cup water, 1/2 scoop vanilla soy protein powder, pumpkin, stevia, cinnamon, pumpkin pie spice, vanilla extract, and 1/4 cup Nature’s Path Agave granola plus some raisins on top. So yummy! I love raisins, they’re so chewy!
For lunch, I had a super mondo salad at work.

Tons of spinach and broc slaw, a few slices of fake ham, half an orange pep, and an ounce of vegan mozz.
PM snacks:

Self-explanatory.
I pulled dinner out of the freezer a couple nights ago. We had leftover sweet potato red lentil chili with black beans from Eat, Drink, and Be Vegan – oh yeah!

Plus tons of steamed broc.
For dessert, I enjoyed a peanut buttery plate!

Okay, it’s not real peanut butter. It’s Better ‘n Peanut Butter and I’m a convert ya’ll. The nutritionals are stellar and they allow me to eat gross amounts of it.
I enjoyed some couch time with these guys.

Laughing at Top Chef - so cute

My Friday workout was shoulders and biceps plus 20 minutes of walking. Short and totally sweet.
Saturday
I woke up at the crack and was really hungry. I started with a bowl of kamut puffs.

I added pumpkin, raisins, and more of that glorious fake PB. I microwaved it too. Nom nom.
I also had a apple with PB!

I was so excited to be alive yesterday because ROB TOOK THE DAY OFF! He only takes Sundays off so this was craza! I was in such a good mood. You would understand if you knew Rob because he is a kick-ass dude.
We took our Little to the REC center – it was so fun. I did 40 minutes of cardio (hiking, Arctrainer, and stair mill) plus a chest and back circuit with lots of pushups and pulling movements. Rob and our Little played basketball and I watched them for awhile. It was so, so, so cute and silly! They played Around the World and everytime Rob made a shot he said, “So pretty.” Our Little started saying it too.
I had an easy lunch back at home.

HA! I had a ww wrap with a blob of fake PB and some prunes. I know right? Not very balanced! Well, I also had a bell pepper that I didn’t take a picture of, so there.
We had a BBQ yesterday so Rob had a shitload of man duties. He made ribs, poppers, hot wings, and grilled sweet potato fries.

Hello ladies
I didn’t take pictures of our BBQ, but I made Gliding Calm tofu AND tempeh, butternut squash fries, parnsip fries, and a huge salad plus lots of crudite. My lab mate brought a yum edamame salad so I ate some of that too.
Leftovers going in the fridge:

Robbie hearts babies!

After everyone else had oinked on a non-vegan dessert (it looked so good – so good!) I rewarded myself for my brute strength with MORE PB. With cherry esence prunes and figs for dipping.

It was fabulous and I have no regrets.
What are your Sunday plans? I have a couple errands to run, but I already cleaned and did the grocery shopping so I’m free to play.
It’s supposed to be 70 degrees so I’ll probably drag Rob to the park and challenge him to some one-on-one. I will so get owned!
Love you all!

What a sweet picture of henry!!!
We don’t have much going on, thankfully. We are meeting the fam for dinner, though.

Loooove your peanut buttery plate and final dessert plate (the final photo, I mean – not trying to suggest that it’s your last dessert EVER, since that would be a true tragedy, haha).
**Sunday plans = yoga, personal-training, homework.

Mmm, your overnight oats are making me hungry!!!

oh erin – you and your hubby are one gorgeous couple!
and ooh -i’ve tried better ‘n peanut butter – it’s good, but it doesn’t taste like peanut butter – has its own distinct taste but is still yummy!
however i read that a lot of people don’t like it because of the ingredients.. that it’s really unnatural. but i know that health food stores (that only sells natural products) are selling it.. so hmmmmm.. a little confused on that one

Wow! I am surprised that you like the Better N’ PB. not that I’ve tried it but I heard such awful things about it. hmm makes me curious to try it for myself!
Posted by Sarah on January 25, 2009 at 9:37 am
hahahahaha i love how much you love better ‘n’ pb! i know some turn their noses up at it bc it doesn’t taste exactly like pb, but i think it’s an excellent condiment in its own right. like pearl said, the ingredients list is longer/scarier … but it’s not that it’s chemical-laden or anything. i think it’s just made from defatted peanut flour? either way,it’s good to have around for those days when pb is all you can think of (ummmm, every day?)!
Posted by Erica on January 25, 2009 at 9:40 am
How fun that the hub took an extra day off. He is a cutie and what a grill master! Sounds like you had a wonderful PB filled weekend
I have been semi lazy day so far. I got up and took the Frankster for his walk, I then semi worked on my 6 month review for work, and I’ve been lounging around now. I have to get ready because we have Body Step practice at 1. Enjoy your dia chicky.

I’m really wantin some Better’n'PB now…darn. I still have three jars of various PBs to finish before I purchase yet another.
You and the hubs are darling!
Oh, and that baby is SO FREAKIN cute!

I feel ya on the slammed weekend, girl!
So cute about you and Rob and your Little. I love Around the World. It’s such a fabulous game!! And the wittle baby is adorable! You and Rob would/will be great parents (depending on what your future plans are, lol)!
Were you a bball playa when you were younger? I played through the middle of high school. I used to be obsessed and thought I was the next Sheryl Swoopes. Then I realized that I was a pip squeak (spelling?) and decided against it!
Enjoy the nice weather! I’m envious!
Posted by Kersten on January 25, 2009 at 10:23 am
Yo! Glad you’re loving the voluminous amounts of PB you now get to consume. Jeal!
Today I’m going to yoga, and maybe work (bleh!). It is snowing here right now! Not really any accumulation on the ground, but on the lawn and plants.
That baby is so cute. And Henry. And Rob! Cute fest

I’m going to the farmers’ market to get bread for Bobby, I think I have to go to Costco, and later I need to get to Trader Joe’s because I finished my fake PB last night. So sad!! Less than a week!
Posted by sarahannmatheny on January 25, 2009 at 11:35 am
Cripes, have some fake PB already, would ya? I used to love the stuff too, but I got burnt out on it. Maybe its time for another try.
What is that Vegan topping stuff? Now you are so “special” because your vegan that you get your own topping?!!
Love the BBQ cookout in the middle of January. You know you are in Texas when…
Baby AND cat pictures??? It doesn’t get any better. And I’ve noticed you’ve got Henry all hopped up on the catnip. No wonder he’s such a spaz!
Much love!

I just bought some kamut puffs.
I love to snack, and they are a good low cal option.
I was lazy yesterday, so I’ve got cleaning, grocery shopping, ironing, etc. to do today.

I love your tender approach to moderation. You always do it right girlfriend!
Your man is too cute, you should have babies! He looks good with them!
I wonder how this PB bologna works in sauces, say, peanut noodles? Or Peanut sauce… hmm! Get on this Er!

Looks as though you are having a lovely weekend. The story about your Little and Rob is too cute! Rob seems good with kids.. when are you guys going to have one of your own?? hehe… I’m teasing!
Have a lovely Sunday and enjoy eating better than PB as much as your little heart desires.
Posted by Sweet and Fit on January 25, 2009 at 2:09 pm
looks like you had a wonderful BBQ! I have never tried PB and prunes together, but come to think of it – it sounds pretty gooooood =)
Posted by Heather Eats Almond Butter on January 25, 2009 at 2:32 pm
You are lovin that PB. Is there any left? Have you ever tried PB2? It’s powdered peanut butter, and you add water to it. 2 TBSP has less than 60 calories, and it’s really low in fat as well. I don’t mind the fat in PB, but sometimes, I just want 4-5 TBSP, but those calories really add up. I always keep a jar of PB2 on hand. they make it in chocolate as well. I thought it would taste funky, but I love it. Here is the Website: http://www.bellplantation.com/. It’s available at some stores, but I order it online. Not too pricey either.
Rob is too cute – love the hunky grill picture! Hope you didn’t get too owned in your b-ball game. Enjoy some of that 70 degree weather for me!
Posted by Jen on January 25, 2009 at 3:05 pm
oiy! I feel a little nauseous from all the fake pb, but if you like it you like it! And I love the pic of Rob and the baby, how cute!
Posted by Jen on January 25, 2009 at 3:33 pm
despite all the wanna-be pb you are consuming, I will not be converted, I stand firm
however, I am happy you love it so much!!!
Posted by Marianne on January 25, 2009 at 4:00 pm
How cute is Henry in that pic?! I love when kitties sleep with their paws over their faces. Sounds like you had a good BBQ!

I spent my whole Sunday on a train back to New York, from Providence!
Posted by ksgoodeats on January 25, 2009 at 4:52 pm
That baby is SO CUTE!! Glad to see you are enjoying that PB! Maaaaaaaybe I’ll try it out one of these days.
Have a fab Sunday night, girl!
Posted by coco on January 25, 2009 at 5:12 pm
Rob is so handsome you lucky girl!!!
Love your load of Better n’ PB. I had a jail of it and liked its taste, it’s just as sweet as I wanted. But I think I’d prefer real PB because one of the main reason for me to have it its great load of good fat! and that Better n’ PB doesn’t have much! And also, as Pearl pointed out, we’re not sure about how it makes and its ingredients!
Posted by Victoria on January 25, 2009 at 5:58 pm
Ha. I’ve never seen that Better n’ PB, but maybe I don’t want to if it inspires such addictive qualities.
Rob & baby pic is really funny.
Posted by lilveggiepatch on January 25, 2009 at 6:25 pm
Ooh baby that chili sounds divine! Just what I need on a cold night in the tundra.
I have to unpack my giant mess of a winter break and catch up my shows, yo.
Posted by glidingcalm on January 25, 2009 at 7:00 pm
i added this post to my tofu page. hope you don’t mind. I know you don’t.
Rob AND that baby are so freaking cute!! wow. adoraaaaaaaaaable.
and i love your food, always. that never changes
Posted by Katie on January 25, 2009 at 7:25 pm
Rice cakes…yum. Everything looks yum, but rice cakes will always hold a special place in my heart. They are pretty much the go-to meal for family picnics/bike rides/camping trips/warm-weather afternoon eats. And almond butter is essential, too!
Posted by Kelly Olexa on January 25, 2009 at 7:48 pm
I have walked by that Better n Peanut Butter a ton- now I will pick up a jar for myself! Yummmy!!
Posted by Meg on January 25, 2009 at 7:51 pm
Yummy BBQ food! Sounds like a great weekend.
Posted by seeleelive on January 26, 2009 at 4:15 am
girl, as long as you still got the peanut butter In SOME form in yo life, i dont see a reason to judge
But er, who is this Little? is it a kiddie? the cat? i am lost!!!
Posted by strongandhealthy on January 26, 2009 at 5:12 am
Love your eats! Sound like you had a great weekend! That baby with your boy is adorable!!
Posted by HangryPants on January 26, 2009 at 6:29 am
No more Better N’ Butter. There must be something un-vegan about it.
Just kidding. I won’t judge.
Anyway, yay for Rob’s day off. The baby is cute. Nothing like a big hot dude w/ a baby.
Posted by lauren on January 26, 2009 at 7:20 am
Lots of Pb!! sounds like a fun weekend!

I’m jealous that you have one of those water coolers in your house.
You are doing so well with this whole vegan thing!! Very impressive! Do you think you’re going to stick with it permanently?
Posted by Erin on January 26, 2009 at 10:04 am
Lee – Oh, I should explain! We volunteer with Big Brothers, Big Sisters of Lubbock, so when I talk about our Little I mean our Little Brother.
Heather – It looks that way!
