Erin: Hi friends!

9 01 2009

Some of you may have noticed that I didn’t post any food yesterday. Somehow I deleted all but my dinner pictures  (this happened while I was organizing my files – no coincidence). You didn’t miss much – everything was vegan, I worked out for an hour, and I tried the blackened tofu from Eat, Drink, and Be Vegan. I tried baking it instead of cooking it in oil.

blog-1395

That was stupid – it didn’t blacken at all! Dreena knows what she’s doing and 1-2 T of olive oil won’t hurt me! Anyways…lesson learned!

Yesterday I had a leisurely morning. I woke up at 5:00, read blogs, and ate one of my favorite breakfasts ever!

blog-1409

WW tortilla with 2 T Naturally Nutty Vanilla Almond butter, lots of pumpkin, and 37 carob chips, grilled on the stovetop. I went to the gym late because I got a ride from Robbie and he is in NO way a morning person! I did 30 minutes on the stair mill plus 20 minutes walking and an ab workout.

I have to take pictures of everything I eat at home because my new camera is colossally huge and doesn’t fit in my bags. You may get natural lighting from me on Sundays! If you read this blog, I doubt it’s for the pictures. :)

Lunch was a leftover salad:

blog-1399

Not-blackened tofu and seitan on top of broc slaw and spinach, plus…

blog-1398

Another whole wheat wrap with Sabra garlic hummus! FYI – I keep a toothbrush here.

I got off work early yesterday! Oh joyous day! And get this: it was 70 degrees out! Rob picked me up and we rolled down the windows on the drive home. It was absolutley gorgeous.

I sent Andrea a text about the weather, and here was her response: “F*#% you.” She is so jealous it’s cute. :)

When I got home, Rob wanted to snuggle with me and the cats. I wanted to look at the new J.Crew catalog. We combined these activities and it turned into a major nap for me – like three hours! Oh it felt amazing! I live for naps.

When I woke up, I ate a banana and a date. It was dinnertime so this was kind of a strange choice.

blog-1411

Rob ended up making his own chicken peanut stir fry, and I wasn’t hungry, so I just chilled on the couch for the night. We watched the game and LA INK! I love that show to death! One of my may-juh friends introduced me to it and I’ll be forever thankful. :) You know who you are.

Before I went to bed, I ate a salad. It seemed like I should!

You know what was the best? Hearing about your favorite features. Our readers have some BEAUTIFUL eyes, lips, cheekbones, hair, and ears even! Thanks to everyone who answered that question. I really hope it made you feel good to stop and think about how beautiful and unique you are! :)

And of course, I have another question for you. Andrea and I are pretty satisfied with how we blog. We started this blog because we were always into what each other were eating. :) But now that we have some kick-ass readers, we should probably take into consideration if there’s anything you’d like us to include or take away from this blog. You know? Suggestions.

This is not an invitation to say how awesome we are. We already know. We are not looking for praise.

We love you all!

I love your blog just the way it is! It’s amazing and the food always look delicious.

I adore that blackened tofu recipe!!! It’s the best. I don’t even use oil (just non-stick spray) and it always comes out fine.

LOVE! (ya, praise, duh) I’m excited about your “not-so-blackened” tofu, even if it’s not how it “should be”, it looks delish!

But y’all, are awesome. Honestly, Care To Eat is one of my favorites. Both you crack me up, and I love all your eats. Keep up the good work.
PS – sorry your tofu didn’t blacken. :( Bet it was still good with all those spices. :)

Did you know that your blog is fab?

Hehe :)

But really, I can’t think of anything may-juh to add. Would it ever be possible to do a video post? I’d love to see either of you make a vegan meal during your challenge!

And as far as the eats go, I think your tofu looks yummers, blackened or not. And I’m in love with the garlic Sabra! I’ve finished most of the container in 3 days!

I’ve never heard of LA INK. I Googled it and I’m totally gonna check it out!

Jenn – I bet Andrea can! I don’t have a video camera or anything.

You, my dear friend, is why I started my own blog. Like I told you once, you are like the cool popular senior girl and I’m the lowly freshman carrying your books. Do you think the freshman is going to tell the senior that she needs to get a new handbag? Of course NOT!

Actually, if you could have more cat pictures, that would be great =) Hmm…am I being sarcastic or not???

Love you E-Dog!

I missed you! haha and I totally hear ya about keeping a toothbrush close by when there’s garlic involved…gotta stay considerate right?

Cuddling with cats, a man, and J.Crew sounds like a GREAT way to spend a few hours ;)

I seriously don’t know that there’s anything more I could want from your blog, I just like reading it!

Yay for Friday night!

I was just wondering if your weight has gone up or down or stayed the same since going vegan. Also, I am engaged to a MEAT EATER man and because I have an eating disordered past he worries about me. I am recovered, but still eat healthy and am somewhat of a “flexitarian” i.e. meat has never been my main part of a meal – would much rather fill up on veggies, beans, etc. I was just wondering how your husband reacts to your eating decisions and if it is ever a source of arguments, etc? I don’t mean to pry, but I know with me it’s sometimes hard for him to understand that I feel better when I eat these foods and I truly don’t like junk/crap/processed foods. I think he thinks I don’t “let myself” have those foods… but when you eat “clean” your body truly doesn’t crave them. Anyways just wondering your thoughts on that. Thanks ~ Lauren

haha – sorry about the “not so blackened” tofu…next time! anyways, dont change a thing, i heart your blog, its the perfect combo of sassy fun writing, while giving good tips for food/cooking/healthy living. plus the gym motivation is nice but not overbearing. i love hearing about your daily adventures :)

lauren – That’s a very good question and I appreciate you asking! I am one of those rare, lucky women whose husband doesn’t analyze my diet at all. He is supportive in every decision I’ve ever made. There is literally no one like him on this earth. Everyone else has an opinion, right? I think he really trusts me. As for my weight, I really don’t know. I haven’t weighed myself this year. :) Good luck with you and your future hub.
