Erin: Where’s Andrea?

:( I miss my blogging partner! I keep waiting for a post from Andrea but nothing so far today, so I’ll just be a blog-hog and post my snack and lunch.

I had a yummy plate of carrots and celery dipped in 2 T Sabra hummus. I love those tiny bowls because they’re exactly 2 T so I don’t have to measure anything!

I also had 1/2 cup ff cottage cheese. I didn’t stir anything into it – usually I add something to sweeten it OR make it more savory.

After working, 30 minutes of yoga, showering, and watching the news for awhile, I made lunch. It was very good and hopefully will have a little staying power!

In my salad:

  • 2 cups spinach
  • half a small apple
  • 4 oz baked tofu (obsessed with this! It’s so awesome!)
  • Italian parsley
  • 1/4 cup edamame
  • drizzle raw honey
  • drizzle seasoned rice vinegar

Served with a toasted Ezekial muffin topped with some sf blueberry jam.

I had to include this picture because you can see one edamame peeking out from under a spinach leaf. They all fell to the bottom of the bowl, naturally! This was a nice combination. I hope the additional beans will keep me full for at least 2 hours!

Just to be sure, though, I had 1/4 cup trail mix. ;) Like my justification?

On a side note, yoga was really awesome this morning. I felt very strong and powerful. I just love it! Any other yogis out there?
