E: I’m late!

I took advantage of the mild weather (92 degrees!) to pull some weeds this afternoon. Yikes, it was a total sweat fest! My beds look MUCH better though. :) I only do it about every 3 weeks. I’m not a gardener, but I am a perfectionist! So I eventually get around to it.

I worked up an appetite along with my sweat, so I chose a snack that had lotsa water in it! About half a cucumber, 1/2 cup ff cottage cheese, and a kiwi.

You’ll note that I’m continuing on with my theme today: every picture has a different background! :) This is on my lap in my office, which I never use. Too far from the hub!

After that I was a little full, but I thought it would be short-lived so I followed up with a chocolate Vitamuffin!

I walked in the laundry room just to take that picture. I can say I’ve never eaten in there (unless maybe I was chewing on something from the kitch and happened to switch laundry at the same time, which is entirely possible!).

Dinner tonight was soda-licious (yuk yuk)! I’m excited because I was able to use up that penne I took home from dinner the other night.

It’s not whole wheat, which is always my preference, but it’s hard for me to throw away food I can use.

I pounded a turkey tenderloin until it was about 1/4″ thick, then pan seared it and set it aside. To the same pan I added some olive oil (to loosen the brown bits), garlic, sun dried tomatoes, 4 cups spinach, dried rosemary, and a can of white beans. I cooked that until the spinach wilted, sliced the turkey, then tossed everything together!

I forgot to mention that I grilled some squash as an appetizer, because I needed something to snack on while I cooked. ;) Some people unwind with a glass of wine…I go with squash!

I split that with Rob. Just seasoned it with a little s & p. Muy simple.

I forgot to mention that I doused it in parm and seasoned with lots of pepper and some salt.

THE COUNTERS! How did those get in here?! Okay, I should just tell you guys, we don’t have a kitchen table! I sold it a few months ago and we haven’t replaced it because a) they’re expensive, and b) we always eat at our enormous island, which doubles as a table and has four chairs and everything! So it’s hard to avoid and I totally spaced on my goal of using an original background for an entire day. I’ll have to try it again some other time!

After awhile, we got bored and decided to hit up Cost Plus! I brought 1/2 cup trail mix with me in case I got hungry, which I did 2 hours after dinner. Right on schedule!

Those 1/2 cup Gladware containers are the best ever!

We did a little shopping and when we got home, I had an Yvonne moment, which is to say I went CRAZA organizing and cleaning! I decided the cupboards needed to be in tip-top shape, so I took everything out and moved it around so it was nice and neat. This led to me scrubbing under the sink, washing the garbage can, the whole deal. Of course, then I cleaned the fridge. It only made sense at this point! Then the freezer. Then the bathroom cupboards. Then I was over it!

I rewarded myself for all my hard work with some more trail mix, this time from a bag my mom sent me (no TJ’s in TX). This used to be my FAVE trail mix because it had M & M type candies in it, AND almonds. Let’s be real, trail mix is a clever way to eat candy.

I also had a nice, cool bowl full of: 1/2 cup all-bran, 1/2 cup ff plain yogurt, 1/2 cup ff cottage cheese, and a peach. The peach was SO ripe that it was practically rotten, but I went for it! I also drizzled some Agave nectar on top. New favorite sweetener!

Sorry for such a long post. I was kinda busy! I have some catching up to do - I barely got a chance to read my favorite food blogs today. :) I’ve got some yoga to do. Goodnight!

That Vitamuffin looks so good! And I love the fact that you went into different rooms to take your pictures. It makes it more of an adventure :)
