Gorgeous day!
I slept in until 7:30 (wow!) and still felt full from last night’s crazed snack fest. So I hung out with my cats and did the meal planning and grocery list for the week! I decided on these meals and pulled any recipe cards that I might need:
Then I made the list.
I really love doing this on Sunday mornings when it’s totally quiet in the house. Rob sleeps in until 10 or 11 and from the moment he’s up until he goes to bed, ESPN is on. I’m used to it - in fact, when he’s not home and I miss him, I turn it on because it’s so familiar - but I love love love the quiet time in the morning!
I checked e-mail, read some food blogs and all that, then decided to make a little breakfast.
Which turned out to be huge, actually!
I went for a savory scramble. Usually I eat sweet stuff in the morning but I was craving some eggs. So I scrambled up 3/4 cup egg whites, 1 oz feta, 2/3 cup chopped red pepper and some basil.
This is my favorite kitchen tool. The scooper! It’s easier than using the knife to scoop stuff up. I love it!
Check out the size of my scramble!
It was too much. That actually surprised me because usually I can pack it in like a man. I definitely ate all the bread, though! WOW that bread is still so incredible! I put it in the toaster today. I was actually scared to do so because it is so delicate, dense, and underbaked. I thought it might tip over or fall apart, but it didn’t. What’s funny is the bread came out kinda curled - sort of like a bagel chip. I LOVED it toasted.
I hate wasting food, so I saved what was left of my scramble (maybe 3/4 cup) for later on. That might make a nice midnight snack!
Rob is still sleeping and I’m getting kind of restless, so I think I’ll hit the store solo. Maybe I’ll even take a picture of all the groceries when I get home like some other bloggers do! Ooh whee!
UPDATE:
About twenty minutes after I posted this I hit the fridge for the rest of my eggs. I knew I could do it!

Mmm I love eggs and veggies! Sunday nights are omelette nights this summer - so I’ll be mimicking you later today
I’m having a duh! moment. I never would have thought to break up my grocery list by grocery section! That makes so much sense! I do break mine up by store but I need to do it by section too. Thanks for the tip
Andrea - I’m always here to provide tips on how to be more anal!
Jenn - I guess I’ll have to wait until next week to see your omelet!
